"Yukonthorn “Kuni” Pratanporntrakul Colliton was born and raised in Chiang Mai, Thailand. Her parents, a Thai mother and a Chinese father, instilled in her the values of hard work, education, and family. Growing up in a large family, Kuni learned that food and shared meals can build meaningful relationships that last a lifetime. Around the family table, they not only nourished their bodies but also created lasting memories and connections.
Kuni pursued a degree in electrical engineering, laying the foundation for her career. Following graduation, she joined her family’s business as a programmer, gaining practical experience and making valuable contributions. However, Kuni’s aspirations extended beyond family ties, and she set her sights on an MBA at Gonzaga University. After completing her MBA, Kuni embarked on a successful career in the Information Technology field.
But it was her passion for food that truly ignited her spirit. Kuni decided to follow her heart and create a restaurant that blends tradition with innovation. Together with her nice Nunticha Mui Start and her sister Nongnuch Pratanporntrakul, they formed Kuni’s Thai Cuisine and embarked on a journey to share their love of Thai cuisine with others. Their restaurant reflects modern elegance, inspired by the vibrant cities of Chiang Mai and Bangkok.
At Kuni’s, the menu is a delightful fusion of traditional Thai dishes, Chinese, Indian, and a small touch of Mediterranean flavors. Freshness, nutrition, and customer service take center stage. Kuni’s team customizes meals to suit individual preferences, including a variety of vegetarian and gluten-free options.
What sets Kuni’s Thai Cuisine apart is their commitment to authenticity. They employ Thai chefs who bring their expertise and passion to every dish. From Pad Thai to Green Curry, the flavors transport diners to the bustling streets of Thailand. Kuni’s Thai Cuisine isn’t just about food; it’s about building relationships, sharing smiles, and celebrating life.
After a successful career as an engineer and programmer, Kuni decided to start a new Thai restaurant in north Spokane. To be successful she knew she needed a great team, so she enlisted her sister Nongnuch and her niece Mui Start to join her as partners.
Together they hired a group of talented Thai and American chefs and developed a very simple mission: To make people smile and appreciate Thai food and customs in a manner that respects all people and the community. (Thailand is known as "the land of smiles".)
Rather than open a traditional Thai restaurant, of which there are already many good ones around, the trio decided that a fresh new look was in order. They started with the physical design of the restaurant, where they created a modern, elegant, and fun way to showcase their deep love of Thai food and customs. The goal was to create a setting like you would find in modern Chiang Mai or Bangkok. The delightful result is Kuni's Thai Cuisine.
At Kuni's, the dishes are varied and come from a wide array of sources including family recipes, and ideas from friends, and the remainder are developed by Kuni and her team of talented chefs. The menu includes a variety of traditional Thai dishes, as well as some Chinese and Indian dishes (and a little Mediterranean). The common theme is an emphasis on fresh, nutritious, wholesome, and locally sourced foods when available. Kuni's prides itself on tailoring meals to each person's needs, and has a variety of vegetarian and vegan options for you to enjoy. If it is Thai, we will find a way to prepare what you desire.
Curry Puffs (V, DF)
Two delicate puff pastries filled with potatoes, onion, carrots and green peas deep fried and served with cucumber sauce.
Lemongrass Clam Crowder (GF, DF)
A creamy fusion of New England and Thai cuisine, this aromatic soup blends tender clams, coconut milk, lemon grass, galangal and potatoes.
Kuni’s House Salad (GF, DF, Vegetarian options available)
Organic greens, carrots, red onions, tomatoes, with your choice of grilled chicken or crispy tofu, served with peanut sauce or sesame ginger dressing. Substitute grilled shrimp for $2.
Second Course
Wild Salmon and Green Curry Pasta (GF and Vegetarian options available)
Wild salmon served on a bed of wheat pasta (or GF pasta) with green curry sauce, asparagus, bell peppers and carrots. Two popular dishes in one unforgettable meal. GF breaded organic tofu can be substituted for salmon.
Seafood Fried Rice (GF, DF)
Dungeness crab, shrimp and mussels with wok-fried rice blended with egg, onion, tomatoes, carrots, and green peas, served with cucumbers and tomatoes.
Chiang Mai Noodles and Chicken Drumsticks (GF and Vegetarian options available)
Egg noodles in Chiang Mai-style curry soup, topped with crispy egg noodles and two chicken drumsticks. Served with pickled mustard greens, red onion, and fresh lime.
Third Course
Thai Tea Crème Brûlée (GF, V)
A decadent fusion dessert blending French crème brûlée with vibrant Thai iced tea. Creamy, spice-infused custard topped with a caramelized sugar crust, offering a delightful crunch and exotic flavor in every bite.
Oh My Mango (GF, DF option available)
A luscious dessert featuring creamy coconut ice cream topped with mango chunks and a light sweet mango sauce.
Thai Ice Cream Sandwich (Khanom Pang Ai Tiim)
